There are many things you should consider before you have sex or pop the big question. For one, consider the possibility of a child. Even using a condom and birthcontrol isn't 100% effective. A virgin could even have allready broken her hymen with out having sex (the hymen breaking is what causes women to bleed.) Part of this debate depends on your definition of "virginity" she may have previously had oral/genital contact, or been fingered. So therefore the "talking it through" test is flawed. She may know alot about sex, without having experienced it.
On the whole, you cannot know physically if a women is a virgin (whatever definition you may like). And in my opinion, if you do not trust her word- then she shouldn't have sex with you at all.
